The Pizzaiolo Journey
Pizzaiolo was founded in 2007 with a simple mission: to bring authentic Italian pizza to Canada while incorporating the finest local ingredients. Our founder, Maria Rossi, spent five years in Naples learning from master pizzaiolos before returning to Canada to start her own pizzeria.
The name "Pizzaiolo" (Italian for "pizza maker") reflects our commitment to the craft of pizza making. We honor traditional techniques while embracing Canadian flavors and innovations. What started as a single location has grown into a beloved chain across Canada, but our dedication to quality and authenticity remains unchanged.
Our Philosophy
At Pizzaiolo, we believe that great pizza comes from great ingredients, passion, and technique. We make our dough fresh daily using a slow fermentation process, source local ingredients whenever possible, and cook our pizzas in specially designed ovens that reach the perfect temperature for that ideal crust.
We're proud to be part of the Canadian food scene, bringing together Italian tradition and Canadian innovation in every pizza we make.
